Cleaning & Re-Certification

The fire marshals require the commercial kitchen exhaust system to be inspected and/or cleaned by an industry trained professional where crew members are certified to perform the services to NFPA96 fire code. The education and certification that the Steam Guy crews receive is delivered through NFPA (National Fire Protection Association) and IKECA (International Kitchen Exhaust Cleaners Association) as well as partnering with industry related niches where training includes designations and certifications for new & seasoned employees.

All the pieces in a commercial kitchen exhaust system need cleaning, adjusting and recertification. We’ve listed here some important highlights:

  • Kitchen Hood (exhaust, canopy, range) lives above your cooking surface.
  • Fire Suppression system also lives above your cooking surface. This service can NOW be bundled with the cleaning of the Kitchen Exhaust System which offers you a cost saving.
  • Grease filters also known as baffles serve as the 1st line of defense – should a fire ignite.
  • The air extracted by the fan passes through the filters to collect the grease.
  • Filters should be cleaned weekly and they should be in place before the food is on the grill.
  • The Vertical and Horizontal ducting connect the kitchen hoods to the fan so that the air from the kitchen can be exhausted through the fan. These ducts will accumulate grease, which need to be cleaned out. Longer runs of ducts require installation of access panels to allow better access. It is imperative that the ducting is constructed of welded steel.

The exhaust fan extracts grease, smoke, odors, fumes and grease laden vapor from the cooking surface which attaches to metal. Where the vapor isn’t absorbed into the atmosphere the grease collects in the fan bowl creating the need to be regularly cleaned.

Once the kitchen exhaust system has been cleaned, it has been recertified UNLESS there are issues in the system. Our crews are well versed in delivering this service for you and have the knowledge, training and experience to understand whether a problem exists and will communicate the status on your After Service Report.
